Abstract

Vegetables and fruits are extremely important in human nutrition as a source of nutrients and for reducing the risk of developing certain chronic diseases.Within this group of diseases is diabetes mellitus, which is a disease of multifactorial origin, characterized by a group of metabolic disorders that give rise to chronic hyperglycemia, one of the characteristic symptoms of this disease.Historically, various medications have been used for treatment, but recently the importance of diet in the control and prevention of this disease has become evident. There are several plant species recommended by traditional medicine that are part of the common consumption in the diet of the Mexican population and that, in addition to their hypoglycemic effects, are rich in vitamins and minerals necessary for adequate nutrition. In this work, the properties of some of these foods that allow them to have an effect on the reduction of blood glucose concentration will be discussed.
